I boiled up all of the potatoes last night for our potatoes persillade and had about 1/2 lb. left over. So, I made my famous potato salad for a mid afternoon snack!
Ingredients:
1/2 lb cooked red potatoes
3 scallions
1 tablespoon capers
1 tablespoon relish
1 teaspoon fresh chopped parsley
2 tablespoons Veganaise
2 teaspoons dijon mustard
1 tablespoon fresh lemon juice
S and P
Directions:
Place the cooked potatoes in a bowl. Slice the scallions and add to the potatoes. Add the capers and relish. Chop the parsley and add to the bowl.
In a separate bowl, combine the Veganaise, dijon mustard, lemon juice, salt and pepper. Whisk to combine. Taste and adjust.
Pour some of the dressing over the potatoes and mix together well. Add the rest, if necessary.
